Locally sourced in the Bass Strait, Southern Rock Lobster is widely recognised as the finest quality rock lobster available.
It has a moist, medium-to-firm flesh, low oiliness, and a sweet rich flavour. Cooked meat is typically white with orange tinges, and the leg meat is often a little sweeter than tail meat.
We catch them & store them in our live tanks, when required we take them from the tank so you are guaranteed to receive the highest possible quality crayfish.
