Our king fish is wild caught and Australian. Also known in Japan as Hiramasa, Kingfish is regarded as one of Australia's finest sashimi species. Identified by its pale pink flesh and sweet, oily and rich flavor, it is a versatile fish with few bones. It lends itself to a variety of cuisines and cooking styles, with its fatty flesh suiting well to most dishes. 

Cooking Recommendations:

  • Sashimi, Sushi or Carpaccio
  • Grill or BBQ - cook skin down for crispy skin
  • Steam or Bake
